Spring Break

Every year the school year seems to go by faster and faster and this one is no exception. I can’t believe that in a matter of months I will have one child done with 4th grade and one child done with 1st grade! As happy as I was to have a slow, relaxed morning today, I was not happy with the fighting that started at 9am.

After we did some chores, we headed over to our old neighborhood so they could play with their old friends and I’m hanging out with my sister in law and her two kids.

Currently all kids under the age of 5 are taking a nap and my two oldest kids are out playing with their friends. I like how this day is ending WAY better than how it started!!!

Lunch today was something I’ve been craving for at least a week

Egg salad sandwich. I had mine on a sandwich thin and a thick slice of tomato.

Served along side apples slices and a pickle. It was a perfectly filling lunch.

And now I’m off to read a book and enjoy the sun shine on our first day of spring break.

What I Ate Wednesday

I haven’t participated in awhile, but since my posts are pretty much once a day now that my sister has joined with me, I am excited about doing WIAW posts again!

Lunch was leftover salad from the night before. I put it in a mason jar in the fridge and was surprised that it stayed crisp, normally I despise leftover salads because everything gets all soggy, but this was like I had just made it. Mason jars, for the win!

After T and K got out of school, we headed over to the park for some fun in the sun. I’ve tried many coconut waters over the last couple of years, and really have not been a fan. I spotted a new one in Target the other day and decided to give it a try.

I am in love. I drank this as fast as I could, I was kicking myself for not buying more!!

Six Week Body Makeover

I meant to get this post up this morning, but it’s currently 12:30pm and this is the first time I’ve had a few minutes to breathe and sit for a few minutes. Two kids are off school today which means I’m going crazy busy all day long and trying to get things done in between refereeing fights…

Yesterday morning started off my long cardio day; 1 hour on the treadmill. It actually went by really fast, thanks to a fun playlist on the iPod. I couldn’t believe it when I looked at the time left and it was already down to 17 minutes…gotta love when that happens!

I have been reluctant to share the program I have started. I have no idea why I’ve kept it a secret, it’s not a secret and if it will help me get this weight off…why not?! I am doing the Six Week Body Makeover. Like I have mentioned, it’s focused on lean protein, lots of vegetables, fruits and whole grains. I’m eating 6 meals per day, roughly every 2.5 to 3 hours. I know there is no way I will lose all of the weight in 6 weeks, which is why I’ll be doing it for 6 weeks then a less restricted version for 3-4 weeks and then depending on how much weight I still want to lose, I’ll go back on it for another 6 weeks. I really like this program because I’m not cutting out any food groups and it focuses on eating whole, fresh, real foods. The program came with sample menus and then a flip chart for when I want to change things up a bit. For now I’m just sticking with the sample menus until I feel comfortable with the program to change things up.

Breakfast yesterday was an egg sandwich with 1 cup of sliced strawberries

My mid-morning snack was 2 oz of tuna mixed with mustard, relish and a bit of mayo, with crackers

and an orange

Lunch was such an amazing salad:

broccoli slaw, cucumber, tomato, 2 oz of tuna and topped with mustard.

My mid-afternoon snack was my new favorite yogurt: this is SO good, I need to get more!!

Dinner was 3 oz of baked BBQ chicken, roasted broccoli slaw and a baked potato with a bit of butter, salt and pepper.

Purple {tropics} Monster

I was making a smoothie to go along with my salad for lunch, but this purple monster was such a monster that I didn’t have room for the salad and ended up eating that a couple of hours later.

Purple Tropics Monster

  • 1-2 cups spinach
  • scoop of protein powder (I used vanilla)
  • 1 cup frozen blueberries
  • Coconut Butter ( I had a sample pack, so I just used that)
  • Ice (I used about 8 ice cubes)
  • 1-2 cups water (my blender isn’t very powerful, so I need extra water to help mix it all together)

This was my first time using coconut butter and I was so impressed! As I was sipping on this, I closed my eyes and pictured myself drinking it sitting in the sand listening to the waves crash on the beach.

Meal Plan

I bought a book about two years ago and read it cover to cover thinking the whole time “YES! This all makes sense!!!” And then I put it on a shelf and never did anything about it. I read it again over the weekend and this time I’m doing something about it. I’m following the meal plan and I have to say it’s pretty comforting. Knowing exactly what I’ll be eating and I saved so much money at the grocery store this week, it’s a good feeling! I had to get a couple more things, so the official day one will be tomorrow and I’m excited!

I started off my morning doing hills on the treadmill and then finished off with a little ab work. I love the automated programs on the treadmill and even though I did level 1 of hills today, it was a killer…well for a beginner like me! It alternated the incline every minute and then had me doing alternate fast walking with walking every minute. It made the entire workout fly by and I felt like a sweaty beast when I was done, so mission accomplished.

For lunch today I had a very filling meal and was so easy to prepare! The two stars of the lunch:

I used a 100 calorie whole wheat tortilla, topped with the cherry BBQ sauce, then a sliced chicken sausage, the corn and chile salsa on top of that and then shredded cheese on top.

Cold Busting Foods

I woke up yesterday with a little bit of a sore throat, but didn’t really think much of it. As the day wore on, I felt horrendous. I took my oldest to a dr appointment and was relieved that he only had a cold and looked like I was picking it up…yay. I spent the rest of the day trying to relax- as much as I could with 3 kids- and drinking as much hot tea as I could handle.

This morning I woke up feeling much better than yesterday, I’m not 100%, but I’m able to function and exercise, which means YAY for yoga tonight!

When I’m sick I tend to crave simple foods and foods that are easily assembled…kind of reminds me of days with a newborn!

Breakfast was a Larabar, banana and hot ginger tea. A couple hours later, I decided that I needed vegetables and vitamin C so I made a smoothie with spinach and oranges. Perfect.

About halfway through I realized I forgot to add ice…apparently my head is still a little foggy today.

Lunch was the ultimate in comfort/sick food: soup! I’ve had this can of minestrone (one of my all time favorites) soup from Trader Joe’s and today was the perfect day to use it.

Full of noodles and vegetables = so good! And then had a cup of watermelon on the side.

And now, it’s time to grab a blanket and snuggle on the couch with more hot tea while my youngest is taking a nap.

Lunch of Champions

Every part of this lunch was like magic in my mouth (TWSS) I had a chicken apple sausage, roasted broccoli and onions and spicy sweet potato fries.

I put everything on a cookie sheet, cranked up the oven to 400 and in 20 minutes it was all done. I’m pretty sure I’ll be having this combo of foods again. Soon.

Tonight is taco night and my 3 year old is asking me every 5 minutes when it’s time for dinner. All 3 of my kids love taco night!!! What can I say? We like adventure Winking smile

AM/PM or Does It Matter?

Last night, my Mom and I went to yoga and it was life changing. I was so relaxed and sore by the end, I felt alive and amazing. I found myself releasing all the stress from the day and just breathing and I was much more awake than working out before the sun comes up.

When my alarm went off this morning, there was no way I was going to get up and work out…my core and legs were still screaming at me from what I put them threw mere hours before hand. That being said, I want to get some exercise in today, so I’m thinking I’ll try evening workouts and see if that’s better than 4:30am workouts. Stay tuned…

I bought a different type of bread at Trader Joe’s and I can’t believe how filling it is! It’s called Whole Grain Fiber bread and it has 5 grams of fiber per slice. Yes, please! I also had my standard salad that I can’t get enough of lately and…more strawberries.

I’ve always been a big believer in first thing in the AM workouts, but that’s also when I had a full time job. Maybe evening workouts will be better for me? Maybe I won’t be so tired all the time?

What is your stance? Is morning or evening better, or doesn’t make a difference?

Baked, not fried

You may have noticed that there haven’t been any Turbo Fire updates, that’s because I got very discouraged doing one titled Core 20. My body literally can not move like that yet. The core exercises were near impossible and I found myself watching and making half-hearted attempts thinking that would somehow make me capable in doing them.

I haven’t worked out since Saturday morning and was going to admit defeat and do something else instead of the Turbo Fire / ChaLEAN Extreme combo I was doing. And then I received this comment:

You can do it!!!!! Whatever you do, you can’t get discouraged!!!

And this one that made me cry:

Jen you are truly an inspiration!! THIS right here is why you blog. There are so many people who are moments away from walking away from it all BUT all it will take is for them to read this and they will be inspired. YOU will inspire them. You’ve inspired me! Thank you Jen!

I put my big girl pants on and I’m NOT admitting defeat. There are some moves I can’t do right now, but if I keep trying, I will be able to do them!!!

My Mom and I are starting a yoga class tonight. I’m nervous about doing yoga in front of people, but I’m excited as well. And tomorrow morning, I WILL be doing a TF or CLX DVD.

Breakfast:

A Chocolate Nut Bella Bar and a banana. (6P+)

Ingredients: Dates, Walnuts, Pecans, Agave Syrup, Hemp Seed, Rolled Oats, Hemp Powder, Ground Flax, Brown Rice Protein, Cocoa Powder, Vanilla, Cinnamon, Salt.

My 3 year old LOVES these! He thinks they are candy bars! I like how they fill me up for hours and taste delicious as well. I’m not a huge chocolate fan, but these have just enough chocolate to be sweet, but they aren’t overpowering.

Lunch:

I love me some potstickers, they are little dumplings of goodness and up until today, my preferred method of cooking was what they told me to do on the bag; boil in water and then “fry” them in olive oil so they turn brown and get crispy. I had another idea. I turned the oven to 425 and used 2 teaspoons of olive oil (to get in the recommended amount by WW) and baked until they were brown on the top, then flipped them over until they were brown on the other side. Did they taste like they do cooked in a pan with oil? No. But, they were still good and I will cook them like this again!

I also had a simple salad of lettuce, broccoli slaw and Trader Joe’s Spicy Peanut Vinaigrette and strawberries.

I mentioned earlier, that I went to Trader Joe’s for two things this morning, and one of the extras I picked up was this salad dressing.

Sorry, it’s pretty blurry, but you get the idea. I have seen this around on the blogosphere, but always forget to pick up my own bottle…today I remembered and I’ll never go without it again.

The glob on top is one of my guilty pleasures. It’s probably horrible for me, but as I’m learning in Weight Watchers, nothing is off limits and believe me when I say I used to eat triple that amount before Weight Watchers. The ultimate in guilty pleasures; Tostitos Queso Dip.

I’ve been waiting for the husband to come home so we can watch the one show we like to watch together; Revenge. It was finally a new episode last night and I can’t wait to watch it!
